New seaweed collaboration a first for Scottish Sea Farms

June 6, 2024 - Scottish Sea Farms has teamed up with a seaweed growing venture in a scheme that combines salmon and kelp farming on Loch Spelve, in the Sound of Mull.


The aim of the year-long pilot is to enrich and replenish the marine environment, feeding into the company's work to minimise any impact on its farming activities.

The farm, which had been fallowed, was chosen as a suitable testing ground in the collaboration between Scottish Sea Farms and businessman and writer Guy Grieve, who ran the Ethical Shellfish Company from Mull and now plans to produce commercial quantities of sugar kelp, to be used in garden compost.

The seaweed lines, installed last October, produced encouraging growth over the winter, and this month four 90m pens will be stocked with salmon. 

"The mutual benefits of growing salmon and kelp in the same waters have been shown in multi-trophic aquaculture projects elsewhere," said Scottish Sea Farms Head of Sustainability and Development Anne Anderson.

"Seaweed is so beneficial in so many ways for the marine environment. As a plant, it absorbs carbon dioxide, while releasing oxygen. It's a bit like planting trees to offset your carbon footprint.

"And some of the organic nutrients, nitrogen and phosphorous, from salmon farming are absorbed to help nourish the kelp. It will be interesting to see if we get more seaweed growth once we put the salmon in."

Scottish Sea Farms sought permission from Crown Estate Scotland for the trial and talks are now underway to amend the farming lease to cultivate seaweed longer term.

Salmon farmers in Norway, including Lerøy and SalMar which co-own Scottish Sea Farms, have hosted seaweed farming businesses adjacent to some of their farms.

In an earlier trial, Scottish Sea Farms pioneered seaweed settlement within salmon pens to replace artificial hides for cleaner fish. The project, at Scallastle, resulted in improved health and welfare for both the salmon and wild wrasse, a species of cleaner fish.

In Loch Spelve, Area Support Manager for Mull Andrew MacLeannan worked with Guy and Mull-based Inverlussa Marine Services to install four 750m of seaweed lines (a total of 3km), seeded by Dutch supplier Hortimare, and tied the lines to the raised salmon pen grid.

"We plan to stock the farm with 7kg fish, from Fishnish in the Sound of Mull, so this will only be a four or five-month cycle, not the full 18 months," he said.

"Loch shelve is sheltered so ideal for seaweed, which doesn't like strong currents, but the environmental conditions have been challenging for salmon are stocked, and checking for levels of plankton, which can impact the gills."

Guy, who runs Atlantic Garden, supplying seaweed-rich compost to gardeners, wanted to start producing seaweed at scale in Scotland to complement the seaweed gathered from harbours. "One of the key points about farmed seaweed is you get a very clean product whereas when you gather it you have to remove plastic," he said.

"I had fished out of Loch Spelve for 12 years and it struck me as immediately obvious that the best partners for this should be someone like Scottish Sea Farms, for the simple reason that for decades they have been working at sea, through thick and thin, and through every kind of weather.

"I approached Regional Manager Innes Weir and he was very supportive. We all recognised that seaweed is beneficial for the environment in different ways and agreed to look at it more closely."

Guy plans to keep the crop in the water until the summer to harvest as much biomass as possible, up to 30 tonnes, all being well.

"We should get 8-10 kilos per metre of seeded line but this is a pilot so we don't know what to expect yet. I look forward to what we learn from this trial and what our next steps will be."

Atlantic Garden is donating 20p from every bag of seaweed compost it sells to the Scottish Coastal Clean-up.

Forsea debut cell-cultivated eel unagi

June 6, 2024 - Cultivated seafood start-up Forsea Foods Ltd put its cell-cultivated freshwater eel unagi creation to the test. The cultivated seafood start-up hosted the first official tasting of its cultured freshwater eel at the chic Tel-Aviv restaurant 'a' and welcomed an intimate gathering of 40 guests. The exclusive group included investors, journalists and key opinion leaders in the food industry, as well as representatives from the Japanese embassy and various Japanese food companies based in Israel.

On the menu were three culinary fish creations which included Forsea's cell-cultivated iteration of unagi kabayaki - grilled fresh eel on a bed on aromatic rice. This traditional Japanese dish was featured as the centrepiece of the menu.

On a mission to save wild eel populations, and other species at risk, the company pioneered a new approach to cell cultivating fish tissues outside their native water habitats by applying organoid technology. Forsea's patent-protected method involves creating the ideal environment for fish cells to spontaneously assemble themselves into three-dimensional tissue structures with their natural composition of fat, muscle and connective tissue. This method is designed to echo the natural growth process of these tissues in a living fish, aligning cell-based technology more closely with nature.

The added benefits to this method of cell-cultivation is that it bypasses the scaffolding stage and dramatically reduces the dependence on costly growth factors. This makes the process highly scalable, raising its commercial viability as well as price parity with traditionally aqua farmed eel meat. Wild eel has been experiencing severe supply shortages due to overfishing, while aqua farming of eel remains difficult, and breeding eel in captivity remains elusive.

This shortfall occurs amidst a surge in demand for the Japanese delicacy, not only among the Japanese population but also across Asia, the United States and Europe. This has resulted in a jump in the wholesale price of freshwater eels to as high as US$60 per kilo.

"Forsea's unique organoid technology has the potential to overcome many of the industry bottlenecks in bringing cultivated meat to the consumer plate," asserts Roee Nir, CEO and Co-Founder of Forsea. "Since the start of the year, we made significant advancements in improving our cell lines. We also have been working diligently to enhance our recipes. This event was a great opportunity for us to present our unprecedented achievements to partners and industry stakeholders."

At the closed dining event, guests enjoyed the first tastings of Forsea's cultured eel unagi filets. Forsea's creation embodies the flavour and smooth, tender texture of traditional eel unagi. It is free of pollutants (such as mercury), industrial chemicals and microplastics. It also is highly sustainable and helps protect the aquatic environment and its inhabitants.

Celebrated Israeli gourmet chef Yuval Ben Neriah, specialist in Asian cuisine and owner of the five elements-inspired restaurant Taizo located in Tel Aviv, played a pivotal role in fine running the finished product to capture the authentic flavour and sensory attributes to the Japanese specialty.

"As a chef who spent many years tantalising diners with fine Asian cuisine, this project with Forsea has been particularly exciting as it marks my first venture into future food and the world of cell-cultured seafood and its resonating sustainability message," says Ben Neriah, Chef of restaurant a. "The feedback from the diners was indeed uplifting. Several remarked that they wouldn't have guessed that the unagi was cell-cultivated had they not been informed."

Executive chef Katsumi Kusumoto, who started the vegan restaurant SAIDO in Tokyo, also contributed to bringing Forsea's inaugural unagi product to culinary perfection. Unagi ha been a famous specialty of Chef Kusumoto for many years. Forsea projects that its debut product will be primed for commercial roll-out by 2026 and is currently forging connections with strategic partners in Japan.

Takahashi Seiichiro Japan's Deputy Chief of Mission to Israel congratulated Forsea's achievements "I would like to thank Forsea for choosing eel, an endangered species but indispensable for the Japanese and Asian diet. While we Japanese have been eating eel for more than 5000 years, we understand that cultivating eel is no simple task. Therefore, I believe that introducing the first cell-cultivated eel is the accomplished result of great comprehensive corporate efforts."

WiSA seeks new host to ensure continuation of its impact

June 6, 2024 - Women in Scottish Aquaculture (WiSA), a network dedicated to supporting the growth and development of women in the aquaculture sector, is seeking a new host to ensure the group continues its impactful work in the future.

Since 2019, WiSA has been administered by the Sustainable Aquaculture Innovation Centre (SAIC). The innovation centre recently announced it had secured a new funding package to sharpen its focus on helping to deliver R&D on finfish health and wellbeing, and its new focus means SAIC will have to step back from providing administrative support for WiSA.

At a session held during the Aquaculture UK trade show, the organisers of WiSA issued a call to find a new host to deliver its initiatives, including mentoring programmes, the WiSA Awards, events, training and online knowledge-sharing.

WiSA was formed on International Women's Day in 2019 following a consultation of 200 people working in the aquaculture sector. Nearly all (90%) of the respondents were keen to see a network for support for women working or considering a career in the industry.

Since its inception, WiSA has grown to almost 400 members, including representatives from finfish, shellfish and seaweed, opening in industry, government, academia and non-governmental organisations.

SAIC will hold meetings through June and July with prospective WiSA host organisations, with the aim of identifying a new host in August and handing over the responsibilities in September.

Heather Jones, Chief Executive of SAIC, said: "I founded WiSA because I am passionate about supporting and promoting the role of women in aquaculture. The network has proven to be a vital step in helping the sector to grow. We are now calling on organisations who share our vision to step forward and help us ensure WiSA's initiatives continue to thrive."
